Hope everyone that gets to PC for New Years have a great time and stay safe. I've got family coming over to see how many Blackeye Peas they can eat. Old Southern tale, one day of good luck for every pea you eat. Doesn't say you have to keep them down if your trying for the whole year.
Besides the usual cocktail party food, we try to serve "good luck" food at our annual New Years Day party,too. Black eyed peas are in the Texas Caviar that we eat with corn chips (instead of corn bread, a good luck food). I mean, they're both made from corn meal, right. I also make a crock pot full of Reuben Dip which has good luck corned beef and cabbage (sauerkraut) that is eaten with rye crackers. Just trying to cover all of our good luck bases as much as possible.
Since New Years Day falls on a Sunday this year I have to work at the restaurant. Was trying to figure out how I was going to be able to eat all my good luck food but decided that I will bring home some of our Reuben Soup, make a plate of hoecakes, and open a can of blackeyed peas. Simple but that should cover my bases for me and my hubby. Only thing I'm sad about is I won't get to have Mimosas for breakfast with the family. :(

Mrs. Peel...you have to send me the Reuben Dip recipe. That sounds awesome. Here in Bama, we do collards, black eyed peas, hog jowl and cornbread...my favorite meal of the year. Last year, we had an epic New Year's Day meal at Bayou on the Beach. For 6.99, you got black eyed peas, a pork chop, jalapeno cornbread and cabbage. Anyone in PCB for New Years should try it! I promise you...you will thank me later. Oh...and did I mention $1 PBR?
Here's the dip recipe for all to enjoy:
1 16oz. can or jar sauerkraut, drained & chopped up a little
1 8oz. cream cheese, softened
2 cups shredded swiss cheese
2 cups shredded corned beef
1/4 cup 1,000 island dressing
Combine ingredients in a slow cooker, cover and cook on low for 2 hrs if not in a hurry. Otherwise, 45 min on high and then turn down. Stir occasionally while cooking.
I serve this with Ry-krisp crackers and if I can't find a good deal on corned beef at the deli, I do half corned beef & half the Buddig corned beef in the little packages. No one seems to notice the difference.
